Around 1.3kg this side of the finest superior grade salmon has an extra long two day cure in beetroot and gin then air dried before been hung high in our wooden smokehouse over mild and aromatic beech wood. This is a complex rounded smoked salmon. Due to the long curing time, this smoked salmon will take five days to prepare and smoke.
